More about cauliflower

Cauliflower (hookosu, ಹೂಕೋಸು) is one of the highest-volume vegetables in a Bangalore restaurant kitchen — from gobi manchurian at the Chinese counter to aloo gobi on the North Indian menu. BulkVeg supplies it wholesale from our shops in the Kalasipalyam APMC yard.

Wholesale cauliflower in Bangalore — what you get

  • Grade: white to cream, tight and compact curds, heavy for their size; outer leaves trimmed back.
  • Sorted out: yellowed, spotted, loose or “riced” heads, and heads that have started to flower.
  • Size: graded to an even head size within each lot, so florets come out uniform.
  • Sold: by weight, in 10 kg lots, at today’s per-kg rate.

How kitchens use cauliflower

For gobi manchurian and gobi 65, even-sized florets fry evenly and hold their crunch — that is why grading matters more than the price of a single head. Tight, dense curds also lose less to trimming, so the usable yield per kilo is higher. North Indian kitchens use it for aloo gobi, gobi masala and gobi paratha; South Indian kitchens for cauliflower poriyal, kurma and pakoda. It sits alongside cabbage and green capsicum on most Chinese-counter indents.

Graded at the yard, packed in leno mesh

Every lot is handpicked at arrival in the Kalasipalyam APMC yard, before anyone else lays a hand on it, then graded, weighed on a certified scale and packed in leno mesh bags marked with your name. The mesh lets the produce breathe on the drive to your kitchen and lets you see the lot before you open it. What is packed is what is weighed — no hidden wastage on the bill.
